Yakof Debono is a local home cook and a teacher of home economics and hospitality who recently launched a new website that celebrates traditional Maltese recipes by reinventing them into something bigger and tastier, one recipe at a time…

When talking to us here at Bay, Yakof revealed that the inspiration behind his recipes and page ‘came from the humble ingredients we all have at home, like honey, Gbejniet, thyme, bigilla, etc. It came to me that these ingredients have so much to offer.’

 

 

The humble cook then added, ‘We tend to glorify international cuisines like Turkish, Indian and Italian, yet we forget what Maltese food have to offer. These in mind, I continuously think of what to create next with what we have here.’

Yakof also shared that he’s been cooking ever since he was a teen and that food ‘has always been my centre of gravity throughout life.’ He also revealed that his fave Maltese recipe is one of the simplest – and this beloved season’s – Kwarezimal, which he recently turned into BROWNIES (yeah!), amplifying their taste into a new, mouth-watering recipe!

 

 

As for who his muses are, Yakof plucks inspiration from renowned chefs Nigella Lawson and Yotam Ottolenghi. However, he also shared that he’s inspired by loved ones like his mum, mother-in-law, and older cooks – all of which ‘saw Maltese ingredients as life-saving sources.’

As for what’s next? Well I’m glad you asked because Yakof let us in on his fondness for Ramen, which he’d like to experiment with and possibly turn it into some sort of Minestramen recipe, hmm… we’d love to see how that’d turn out!

 

 

We also asked Yakof for the most overrated Maltese recipe, which he thinks is Prinjolata, stating that it’s just ‘too much’. And I’m sure many of us can see his point there… we locals are all about ‘go big or go home’ anyways, right?

The talented Yakof concluded by sharing how food has always been ‘a source of pleasure and comfort for him’, and that although he works as a teacher, aspires take his food ‘to the next level’, adding ‘Big wish to write a book, because food gives me a voice. And I love that’ (And we do too)! We can’t wait to see what he has in store for us!
